Toni Novo comes from a family of restaurateurs with deep roots in Valencia. For the past 15 years, he has managed the restaurant founded by his family over a century ago, Casa Carmela, a benchmark in the preparation of wood-fired paellas.
In 2025, he launches La colonia de Carmela in a location emotionally tied to his personal and family journey. It was in those wooden huts that he met the woman who is now the mother of his children and his life partner.
He leads a team that takes care of every detail so that each meal becomes an experience, with genuine hospitality and a warm, familiar touch.
